Feel like you need something filling, but don’t want to add a lot of dressings, cooked meats, etc. to you salads? Here is my favorite quick meal that’s easy, and very filling, not to mention, delicious. It’s also a great way to use up all the cucumbers and tomatoes that you have in your garden right now.
1 Avocado, chopped (or two if you’re really hungry)
1 tomatoe, chopped,
1 cumcumber, chopped
Mix together and season to taste with celtic sea salt, pepper, garlic, chopped onion, parsley, chopped nuts or nut paste (I make mine with my Sampson juicer) etc. Make it however you like. You’ll LOVE it!
This is really, really good and with the healthy fats from the avocado, it’s extremely filling as well.
